Morning all! 

Guy at work whos been making maple syrup mentioned that the maple trees have dried up, but the birch is flowing... I was like what? Birch? 

So I went and got some tree taps yesterday, and tapped 2 white birch out back. Got 128 oz of sap so far, which should make about 1.28 oz of syrup. Score! 

Not expecting a lot of syrup, just thought it would be fun and interesting to try. He said its kind of a toasted caramel flavor.

I live in the Adirondacks where Maple syrup is renowned, but I never heard of getting sap from birches.....interesting

Home made maple syrup is pretty popular here, but that was the first I heard of it. Takes a lot of birch sap to make syrup. 100 gallons to make one gallon of syrup, where maple sap is 40 gallons for 1 gallon of syrup. I imagine that's why you don't hear much about it

We have a few birches on our property , the construction guys downed a HUGE one, I was so pissed....

That's very interesting, I've never heard of birch syrup, but if it tastes like toasty caramel it sounds delicious!

Birches are really beautiful trees, I've always wanted to make a bonsai of a birch. Unfortunately they're not the most rugged of trees to make a bonsai with, and I don't have the best track record with keeping my trees alive... My poor juniper stayed inside most of the winter last year because I thought the cold weather would be bad for it. Turns out junipers need to be outside like 99% of the time to survive. Oh well, live and learn. 

Oh hey Whiskey, add that to the list of random things about me that most people don't know! I love bonsai trees but I can't keep them alive Sad

I'd love to have a few bonsai trees around, but I kill most things I try to grow. I figure I'm in the clear now with my daughter now that she's four and can walk and talk lol
